Vigneti Tardis, Mercoledi, Fiano
Collaboration project between Jack Lewens – owner of London Michelin star Leroy – and Bruno de Conciliis of Viticoltori de Conciliis, Campania, Italy. The idea from the beginning was to create wines from organically cultivated grapes, with minimal intervention and as minimal SO2 added as possible. Fantastic Fiano with plenty of lemon peel, lime salinity but also slight funky edge of tangy cheese. Overall the wine is pithy with good tension. Will shine paired with fish and dishes based on umami.
