Tasting Notes

Aged new world hops were added during the boil to add an impression of fruit without the bitterness of the fresh hops. The beer underwent a slow spontaneous fermentation in Marsala wine barrels for three years. The lees were stirred in the barrel during the fermentation to improve texture.
