La Bascula Atlantic Way Albarino
This is a wine from a small producer, Pazo de Cilleiro, whose cellar is just 2.5 miles from the Atlantic Ocean. After fermentation the wine spends 5 months on lees to gain an extra layer of texture. La Bascula is a benchmark style of Albarino – a concoction of ripe peach, juicy melon with notes of freshly cut hay and herbs. High acidity gives a boost to natural minerality and drives into a long, mouthwatering finish. The best pairings are to be found locally – fishing, gathering of aquatic life, and mussel farming are, next to winemaking, very important industries in the Rias Baixas economy which has provided livelihood for Galicians for centuries. Therefore food-wise think about seafood, mussels, grilled sardines, and meaty fish with herbal dressing. To improve the pairing give a nice squeeze of fresh lemon over the plate.
