Tasting Notes

The vines grow on Kimmeridgian chalky marl soils. This is the exact same type of ancient, fossil-rich soil found in nearby Grand Cru Chablis vineyards, which gives the wine its distinct stony, salty, and flinty minerality.

Run by siblings Aurélie and Thibaut Giraudon, the estate focuses on sustainability. The grapes are hand-harvested and fermented with natural yeasts entirely in stainless steel vats. They avoid oak aging to preserve the pure, zesty fruit flavors.
