3 Fonteinen’s Wilde Terf x Brasserie de la Senne brings together two pillars of Belgian brewing in a unique wheat-lambic hybrid. It began life in July 2020 as “Terf,” a wheat beer crafted by Brasserie de la Senne using heritage Pajottenland wheat varieties supplied by farmers linked to 3 Fonteinen. Some of it was bottled immediately, while the rest aged for three years in oak lambic barrels at 3 Fonteinen’s facility.

In November 2023, this mature barrel-aged wheat base was “lit” with young, fresh lambic—blended at about 55% aged wheat beer to 45% young lambic. the result is a wild ale combining juicy wheat notes with bright lambic acidity, subtle oak tannins, and that distinctive spontaneous fermentation funk.
