June the start of Summer
One of my favourite food times of the year, as now available are the best and freshest ingredients.
Our friends at Source Food have available Asparagus, Globe Artichokes, Heritage Tomatoes and Wild Garlic Pesto.
The perfect time to get the barbecue ready. A great go to dish Pork tenderloin with season veg and fresh herb and tomato salad.
Marinate the pork (chops will work well if preferred) in a splash of Madeira with a mix of fresh herbs, sage, rosemary and thyme with a couple of bashed garlic cloves and couple of turns from a pepper mill. Leave over night or for a couple of ours. Grill or barbecue for about five minutes a side turning regularly. Leave it to rest for the same as the cooking time then slice, season and enjoy.
Barbecued Asparagus is a treat and takes minutes. Simply one or two minutes on each side over hot coals, served with butter and lemon.
With tomatoes this good not much is needed, chop or slice and lightly salt them ten minutes before you need them. Then simply dressed with oil and lemon and some garlic pesto.
