Tasting Notes

Matured for 11 months in oak barrels (including Chardonnay casks) to develop complex wild yeast profiles and soft oak tannins.

Transferred onto whole blackberries for an additional 2 months, allowing the fruit flavours to infuse gracefully without overpowering the base beer. Continued evolution of the brewery’s mixed culture, naturally integrating sharp berry character with wild Brettanomyces funk.
