Tasting Notes
Cantillon Kriek (100% Lambic Bio) is a world-renowned, traditional Belgian cherry lambic brewed by the iconic Brasserie Cantillon in Brussels. Unlike commercial fruit beers that rely on sweet syrups, Cantillon produces a complex, tart, and bone-dry lambic using real, organic sour cherries.
Whole, organic sour cherries (Morello/Kelleris variety) are placed into stainless steel tanks or wooden barrels with lambic that has been aged for an average of 20 months.
The cherries soak in the lambic for two to three months, allowing the wild yeast and bacteria to completely ferment the fruit sugars and extract colors, aromas, and structural tannins. The brewery uses a ratio of 200 grams of fruit per litre of beer.
A portion of young, one-year-old lambic is blended in right before bottling. The residual sugars in the young lambic spark a secondary fermentation inside the bottle, providing natural carbonation (effervescence).
