The winery, founded by former academics who transitioned to low-intervention winemaking, is known for its experimental and minimalist approach.
Sourced from the inner-city vineyards of Lisbon University (Tapada da Ajuda).
A highly natural variation where the grapes are foot-stomped and undergo spontaneous fermentation in traditional 200L clay amphoras (tarrecos). The wine ages on the skins for months, protected from oxygen using a thin layer of organic extra virgin olive oil rather than sulfur.
