Tasting Notes
Madre Espadín is a premium, single-varietal artisanal mezcal handmade in Oaxaca, Mexico. Produced by Carlos Blas and his family using traditional methods, it is crafted exclusively from 100% mature Espadín agave plants harvested across farms in Miahuatlán, Matatlán, and San Dionisio.
The family creates the spirit with an completely machinery-free, artisanal workflow.
Pit Roasting: The agave hearts (piñas) are roasted in earthen pit ovens over hot stones to impart its hallmark subtle wood smoke.
Milling & Fermentation: The roasted agave is crushed using a traditional stone tahona wheel, then fermented naturally in open-air wooden vats using wild airborne yeast and local aquifer water.
Distillation: The fermented liquid is double-distilled in small family copper pot stills.
Sip it slowly at room temperature, ideally paired with a slice of orange and worm salt (sal de gusano).
